Tigernut Chocolate Chip Cookies


  • 1 Cup Tigernut flour
  • 1/4 Cup coconut oil, melted
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 tsp baking soda
  • 1-2 Tbsp raw honey
  • 1/4 cup mini chocolate chips I like the Enjoy Life brand (soy free)


  1. Preheat oven to 350 degrees.

  2. Mix dry ingredients-flour and baking soda

  3. Add coconut oil and honey and mix well.

  4. Next add egg and mix until well combined.

  5. Last add in chocolate chips and mix well.

  6. Drop onto baking sheet. Bake for 10-12 min or until slightly browned.
